The finger limes highlight the Asian spices like coriander and star anise, and are complemented by the addition of fresh ginger. Finally, fresh turmeric adds a fresh but earthy quality, not unlike dill, and weight to the palate.

The resulting gin has lifted aromatics of lime curd, pine needles, and fragrant spices with a vanilla character which pulls the spices together. The palate is intense – sweet and juicy – but it is still very clean.

Four Pillars Navy Strength Gin After experimenting with some exclusive batches for the Gin Palace we decided to add fresh ‘Judy’s Everbearing’ finger limes, along with our beautiful organic oranges. This means we undertake a frenzy of distilling when these beauties are in season, and release just one edition of the Four Pillars Navy Strength Gin each year. The 2015 release was bottled in March. Navy strength gin is above 57% alc which was the strength required to enable gunpowder to still light if gin was spilt on it. Navy Strnegth Gin represents the style of Gin supplied to the Royal Navy and the trade from 1863.
